6 Gluten-Free Weeknight Meals That Will Make Your Life Easier

It’s easy to get stuck in a dinner rut, and even easier if some ingredients are off-limits. But with weeknights busier than ever right now, you’re going to need all the ideas you can get. That’s why we’ve come up with these six recipes, all of which are easy, crowd-pleasing and kid-friendly on top of being gluten free. From hands-off fajitas to a sweet new spin on Italian bean soup, here are half a dozen gluten-free supper ideas that are sure to make weeknights easier.

 

Turkey and White Bean Chili

 

This creamy turkey and bean chili is loaded with flavor and nutritious ingredients without the added fat.

Turkey Cutlets with Fresh Corn and Tomatoes

 

This dish is super-efficient, since the fresh corn and tomatoes double as both sauce and vegetable, plus they cook in the same frying pan used to cook the turkey.

Panfried Halibut with Tomatoes and Basil

 

Fish fillets are an ideal choice for an easy weeknight meal, since most can be panfried in less than 10 minutes. Mild halibut’s the perfect fish to pair with the vibrant flavors of tomato and basil.

Sheet Pan Fajitas

 

For this low-maintenance dinner, the steak, bell peppers and onions are all cooked in a single baking sheet, making prep and cleanup a breeze. Serve the fajitas with corn tortillas rather than flour tortillas to keep things gluten-free. 

Honey-Ginger Pork with Braised Kale

 

This simple pork braise is easy to assemble, and hands off once it’s in a slow cooker. Swap the soy sauce for a gluten-free tamari or coconut aminos and the noodles for rice to make it gluten-free.

Zuppa di Fagioli

 

This variation on the Italian bean soup, zuppa di fagioli, adds chipotle chile powder for a pop of heat and crimson color, then tops each serving with a gremolata made from Meyer lemon, fennel and parsley for a pop of flavor. Hearty and restorative, this soup is perfect for a fall day.
